This dish is called oliaigua, but pronounced /oliaigu/, and one of the island’s historic recipes that is part of our gastronomic identity. However, don’t judge the dish by its appearance, as it doesn't look very appetising at first glance. At the first spoonful, you’ll understand why it’s so popular, though! It’s simple, basic and tasty. dish, whose success is based on the quality of its products and ingredients (vegetables, oil and bread). The bread must be especially for soup and it’s a summer dish, to be savoured in July, August and September.
