Carn-i-xulla (pronounced /carnixua/) is a sausage made with lean meat and pork fat seasoned with spices, then stuffed into pork casings to be cured. Sobrassada is probably the most popular sausage in Menorca and one of the most famous, but carn-i-xulla is the oldest and most traditional. Its origins date back to 123 AD when the Romans passed through Menorca on their trade routes.
