Apricot sponge cake, or coca d'aubercocs in Menorcan, is usually made to celebrate Sant Cristòfol, patron saint of a Menorcan town which is now called Es Migjorn Gran. It coincides with the harvesting dates of a variety of apricot, in this case the apricot known in Menorca as 'galta roja' (because of its red -roja- dot). This recipe is very popular in Menorcan homes, transporting us back to our childhood with all the wonderful and familiar aromas to tempt us while it is being prepared and cooked.
